What you need...
6oz of gluten-free flour
4oz of butter or margarine
2oz of castor sugar
What you need to do...
Sieve the flour in to a large bowl.
Throw in the margarine and sugar.
Get in there with your (clean) hands and mix.
When the mixture is nice and firm, roll out.
Place on a well-greased baking tray and cook at 200ºC1 for 20 minutes.
What you can add...
I love the coconut versions of these; they're great. Just throw in a handful of desiccated coconut as you're mixing the ingredients.
Try a couple of drops of vanilla, orange or lemon essence.
My sister likes peppermint biscuits.
We've also tried strawberry flavoured but, be warned, the flavouring turns your hands red!
Substitute brown sugar (demerera, light or dark).
Add a heaped teaspoon full of ground cinnamon or ginger.
Dried apricots (cut small!) are lovely in these biscuits.
