Gluten-Free Recipes


Based on another of Marguerite's recipes but with some tinkering to make it work with gluten-free flour.

Gluten-Free Cake


What you need...

4oz of butter or margarine
4oz of castor sugar
4oz of plain flour
2 large eggs
1 teaspoon of baking powder1

What you need to do...

Cream the margarine and the sugar together.
Whisk the eggs and beat them in to the margarine/sugar mix.
Fold in the sieved flour.
Make sure it's well mixed.
Use whatever form of cake tray, etc you have/want.
Cook at 180ºC2. Small cupcakes will take 15-20 minutes. Standard cake bases will take about 30 minutes.

What you can add...

Any sort of colour and/or flavouring.
Add desiccated coconut for a lovely coconut cake.
Fruit: peaches are especially nice. Adding fruit does make the mixture wetter, though; it will take longer to cook and won't be as firm when you remove it from the tray.
Use brown sugar (demerera, light or dark).
Add a heaped teaspoon of ground cinnamon or ginger. The cinnamon cake is particularly nice.
Cook this mixture in muffin tins and add dried apricots for a lovely treat.
Sandy emailed me to say that her daughters liked this recipe made with one ounce of cocoa powder.
You can decorate the cake with normal icing (icing sugar and a bit of water) or butter icing (2oz of butter/margarine mixed with 3-4oz of icing sugar).
