Another of Marguerite's biscuit recipes, these are a bit different from the other biscuits on this site.

Gluten-Free Sable Au Citron


What you need...

4oz of butter or margarine
8oz of plain flour
3oz of castor sugar
1 egg
Orange or lemon Essence

What you need to do...

Rub in the margarine and sieved flour.
Work in the sugar and the citrus essence.
Bind with the egg1.
Roll thin and cut out.
Cook at 180ºC2 for 15 to 20 minutes.

What you can add...

You could try different flavours.

Notes

1 You won't need the whole egg so add it slowly.
2 That's Gas Mark 4.
