Gluten-Free Recipes


More specifically: Coconut DooDads. These have developed from a recipe that they used on Blue Peter. They're supposed to be Coconut Balls but, with the gluten-free flour, they won't hold together. So they've become known as DooDads. You need to cook them in small cake cases or you'll get coconut mush!

Gluten-Free DooDads


What you need...

200g of castor sugar
6 tablespoons of water
4 egg yokes1
25g of plain flour
200g of desiccated coconut
½ teaspoon of vanilla essence

What you need to do...

Add the sugar to the water in a saucepan. Gently heat until you've got a syrup. Be careful not to burn it.
Mix the yokes with the flour.
Gently mix in about 5 tablespoons of the syrup in to the yoke mixture.
Then add in the rest. Don't forget the vanilla essence.
Add the coconut and give it a good mix.
Half-fill each cake case with the mixture and cook for 15 minutes at 190ºC2

What you can add...

We haven't tried anything else with these: they're far too nice on their own.

Notes

1 Don't waste the whites: make a meringue.
2 That's Gas Mark 5.
