Gluten-Free Recipes

We started out using the Nutrition Point pastry mixes but then decided to have a go at our own. It took a bit of trial and error with the amount of fat (see below) but it's worked out very well.

Gluten-Free Pastry

What you need...

8oz of gluten-free flour
A pinch of salt
4oz to 6oz of butter or margarine1
Water to mix

What you need to do...

Sieve the flour and salt.
Rub in the margarine.
Add a little water if necessary.
Kneed, allow to stand and then roll out.
Fill with whatever you prefer and top.
Cook at 190ºC2 until golden.

What you can add...

One or two tablespoons of icing or castor sugar to make it sweet pastry.

Notes

1 On our first attempt, the pastry was really difficult to roll out. The only solution was to add more margarine to the original recipe. I'd say 5oz is about right.
2 That's Gas Mark 5.
